Lilly loves… Spaghettoni all'"ostunese"




E' un po' di tempo che non pubblico ricette sul mio blog, ma sono stata indaffaratissima con l'università, dal momento che...mi sono laureata!
Ho raggiunto questo traguardo importante per me e ne sono felicissima, tra l'altro l'argomento della mia tesi è stato il "marketing" agroalimentare per la valorizzazione del "made in Italy" che testimonia la mia passione per la cucina, il cibo, ed in particolare per i prodotti italiani! 
La tesi è stata apprezzata molto dalla commissione, che mi ha dichiarata dottoressa con 110 e lode e, con mia grande sorpresa, ho avuto anche il plauso! Penso proprio che il cibo sia amato da tutti, e, come ho espresso nella mia tesi, penso che possa essere un elemento importante per la ripresa dell'economia italiana guardando ad uno scenario internazionale…
Detto questo passiamo alla ricetta di oggi rimanendo in tema "Made in Italy" e prodotti di qualità, poiché, per questa ricetta, ho utilizzato CAPOCOLLO di Martina Franca, POMODORI SECCHI SOTT'OLIO di Sicilia, ovviamente la PASTA e l'OLIO EXTRAVERGINE DI OLIVA pugliese. 
Io ho utilizzato come formato di pasta gli spaghetti quadrati perché penso si sposino benissimo con questo tipo di condimento (chiamato all'OSTUNESE poiché questo piatto è stato mangiato per la prima volta in un ristorante di Ostuni).
Ora basta parole, vi dico solo che è uno spaghetto saporitissimo e assolutamente da provare! 
Penna e carta alla mano passiamo alla RICETTA (x 4 persone):


  • 1 pacco di spaghetti quadrati (500 g)
  • 100 g di capocollo di Martina
  • una decina di pomodori secchi sott' olio
  • 1/2 cipolla 
  • olio extravergine d'oliva q.b
  • origano q.b
  • sale q.b
PROCEDIMENTO:

Mettere a bollire l'acqua della pasta e nel frattempo in una padella capiente mettere l'olio la cipolla , un po' di origano e far dorare leggermente la cipolla. Una volta bollita l'acqua, salare e mettere a cuocere la pasta. Aggiungere, alla cipolla, il capocollo e i pomodori fatti a pezzetti per un paio di minuti (non di più perché altrimenti i pomodori secchi diventano amari!). Poi scolare gli spaghetti al dente e versare nella pentola con il condimento. Dare una veloce mescolata e servire… il profumo è sublime!

I don' t public recipes on my blog for a long time , but I've been extremely busy with college, because ... I graduated! 
I have reached this important milestone for me and I'm happy, among other things, the subject of my thesis was "marketing" food industry for the development of "made in Italy", it demonstrates my passion for cooking, food, and in particular for the Italian products. 
the committee appreciated my thesis very much, so I was declared Doctor with honors with 110 and, to my surprise, I also had praise! I really think that the food is loved by all, and as I expressed in my thesis, I think it can be an important element in the recovery of the Italian looking for an international scenario ... 
That said we move on to today's recipe keeping in theme "Made in Italy" quality products, since, for this recipe, I used CAPOCOLLO of Martina Franca, DRIED TOMATOES IN OIL of Sicily, and of course the PASTA and EXTRA VIRGIN OLIVE of Puglia. 
I have used as a type of pasta square spaghetti that I think they should marry well with this type of dressing (called OSTUNESE because this dish was eaten for the first time at a restaurant in Ostuni) 
Enough of words, I only say that it is a piece of spaghetti tasty and a must try! 
Pen and paper in hand we go to the RECIPE (for 4 people): 

1 pack of spaghetti square (500 g) 
100 g capocollo Martina 
a dozen tomatoes in oil 
1/2 onion 
extra virgin olive oil q.b 
oregano q.b 
salt q.b  

PROCEDURE: 

Boil water for pasta and in the meantime, in a large skillet put oil the onion and oregano and doing slightly browned onion. Once boiled water, add salt and bring to boil the pasta. Add the onion, and tomatoes capocollo-made pieces for a few minutes (not more because otherwise dried tomatoes become bitter!). Then drain the spaghetti and pour into the pan with the sauce. Take a quick shuffle and serve ... the smell is divine!

Lilly loves...spaghetti pomodorini e pangrattato!

Sono in vacanza...e allora alla villa al mare non passiamo tanto tempo ai fornelli, preferiamo sempre cose leggere e poco elaborate...ma oggi dopo una giornata di mare, avevamo proprio voglia di un bel piatto  di pasta...allora ho pensato di fare gli spaghettiiiii...come? Mmmm...pomodorini! Sì! Ma non solo...tanto pangrattato...per rendere il tutto più... sfizioso! Troppo buoni...3 donne... ne abbiamo fatto fuori quasi mezzo chilo! :D buon appetitoooo...


INGREDIENTI per 3-4 persone:


  • 400 g di spaghetti
  • 15 pomodorini ciliegio
  • pan grattato q.b
  • olio extravergine d'oliva q.b
  • foglie di basilico q.b
mettere a bollire l'acqua della pasta e nel frattempo in una padella far scaldare un pò d'olio per poi versare il pangrattato e farlo tostare girando sempre per un paio di minuti finchè non diventa dorato.


 Metterlo da parte e nella stessa padella versare l'olio in cui far appassire appena l'aglio, e aggiungere i pomodorini puliti e tagliati (alcuni schiacciarli facendo uscire il succo).




 Far saltare tutto a fuoco vivo per qualche minuto, aggiungere le foglie di basilico e salare, dopodichè , prima di scolare la pasta, aggiungere qualche cucchiaio di acqua di cottura. 


Tirare la pasta al dente e aggiungere al condimento , amalgamare il tutto e alla fine aggiungere il pangrattato poi....mangiareeeeee! Buoniiiiii!!!

I'm on vacation ... and then to the villa to the sea we do not spend much time in the kitchen, always prefer to read things and not very elaborate ... but today after a day at sea, we really felt like a nice plate of pasta ... then I thought about doing the spaghettiiiii ... how? Mmmm ... cherry tomatoes! Yes! But not only ... so ... bread crumbs to make it more crispy! Too good ... 3 women ... we made out almost half a pound! : D bon appetite! ...
 

Ingredients for 3-4 people:

400 g of spaghetti
15 cherry tomatoes
breadcrumbs q.b
extra virgin olive oil q.b
basil leaves q.b
boil the pasta water and in the meantime, in a frying pan, heat a little oil and then pour the bread crumbs and toast always turning for a couple of minutes until it becomes golden.
  Set it aside and pour the oil in the same pan in which to wither soon as the garlic, and add the tomatoes, cleaned and cut
(some doing to crush out the juice).
Sauté over a low heat for a few minutes, add the basil leaves and salt, then, before draining the pasta, add a few tablespoons of the cooking water.
Pull the pasta and add to the sauce, mix well and at the end add the breadcrumbs then eat ....
