Lilly loves… Torta "CAPRESE"

Buonasera a tutti, è un po' che non scrivo ma ultimamente sono stata super impegnata! :( In ogni caso oggi avevo voglia di postare una ricetta deliziosa, antica e infallibile, irresistibile… di ritorno da una "gita fuori porta a Napoli" oggi ho deciso di fare la Caprese. La ricetta la ebbe mia madre anni fa da una signora napoletana ed è una ricetta antichissima, quindi prendetela come qualcosa di prezioso, un vero regalo!
Mentre scrivo la torta è in forno e il suo profumo si sta diffondendo per tutta la casa, difficile da descrivere a parole. Per chi non la conoscesse la torta caprese è una torta senza farina, quindi adatta anche per le persone celiache, con cioccolato fondente e mandorle. Rimane molto umida, si mangia con la forchetta, ed il sapore è qualcosa di sublime, per gli amanti del cioccolato…
bene allora passiamo alla descrizione della ricetta, armatevi di carta e penna!

RICETTA CAPRESE:
  • 4 uova
  • 200 g cioccolato fondente
  • 250 g mandorle
  • 180 g burro
  • 180 g zucchero
  • 50 g zucchero a velo ( da spolverizzare alla fine)
Per prima cosa mettere a fondere il cioccolato fondente a bagnomaria. Una volta che si è quasi del tutto fuso aggiungere il burro a tocchetti: si otterrà una crema fluida e lucida che metteremo a raffreddare. Nel frattempo che il cioccolato fonde possiamo iniziare a montare le uova con lo zucchero in una planetaria (va bene anche a mano con una coppa capiente ed una frusta). 
Una volta che avremo ottenuto una massa spumosa ed omogenea aggiungeremo le mandorle (tritate). Per ultimo versare la crema di cioccolato e burro e mescolare delicatamente. Imburrare ed infarinare una tortiera, versare il composto ottenuto e infornare a 180° per 35 minuti. La prova dello stecchino per vedere se è ben cotta sarà un po' diversa dal solito poiché essendo una torta priva di farina la parte interna rimarrà umida quindi lo stecchino anche non sarà perfettamente pulito, ma non preoccupatevi è normale ( importante è che non sia proprio bagnato ma leggermente inumidito! ). Una volta sfornata la torta prima di fuoriuscirla dallo stampo (io consiglio sempre la tortiera apribile perché è più comoda) lasciarla raffreddare per bene. 
Infine adagiare su un piatto e cospargere di zucchero a velo… una vera delizia per il palato, per l'olfatto e per la mente! Lilly loves…Torta Caprese!

Torta caprese

Good evening everyone, is a bit 'I do not write, but lately I've been super busy! :( Anyway today I wanted to post a delicious recipe, ancient and infallible, irresistible ... returning from a "day out in Naples" today I decided to do the Caprese. The recipe was given to my mother by a lady from Naple years ago and it is an old recipe, then take it as something precious, a real gift!
while I'm writing the cake is in the oven and the smell is spreading through the house, it's hard to describe in words. For people who don't know the Caprese is a cake without flour, therefore also suitable for people with celiac disease, with dark chocolate and almonds. Remains very wet, you eat with a fork, and the flavor is something sublime, for chocolate lovers ...
well then we pass to the description of the recipe, armed with pen and paper!

RECIPE Caprese:


4 eggs
200 g dark chocolate
250 g almonds
180 g butter
180 g sugar
50 g powdered sugar (to sprinkle at the end)

First put to melt the chocolate in a double boiler. Once it is almost completely melted add the butter into chunks: you will get a smooth and glossy cream that we will cool. Meanwhile melt the chocolate we can begin to whisk the eggs with the sugar in a planetary (maybe by hand with a large bowl and a whisk).
Once we got a foamy and homogeneous mass  add the almonds (chopped). Finally pour the chocolate cream and butter and mix gently. Grease and flour a cake pan, pour the mixture and bake at 180 degrees for 35 minutes. The toothpick test to see if it is well done will be a little 'different from usual because being a cake without flour the inside will remain moist so the toothpick also not be perfectly clean, but do not worry it is normal (it is important that it is not just wet but slightly damp!). Once baked the cake before escaping mold (I always recommend the pan opened because it is more convenient) to cool.
Finally lay on a plate and sprinkle with powdered sugar ... a real treat for the palate, to smell and mind! Lilly loves ... Torta Caprese!
